Daar’s nog meer as genoeg tyd.... om hierdie supermaklike ’slim koolhidrate’ sop vanaand te maak.... en genoeg te hê vir môre vir saamneem. Amper moeiteloos!

As jy sukkel met opgeblaaenheid, voeg ’asoefetida’ speserye en fenukreek of vervang die Lensies met 300 g Patat geskil.

Sop maak 3 liter. Elke porsie lae koolhidrate EN slim koolhidrate.

10 minute - Kerrie-rooilensie -of patat- en groentesop

3 eetlepels kerrie puree van keuse – bv. Thai Red Curry of Korma Curry of jou gunsteling ‘bobotie’ mengsel.
2 ½ koppie rooi lensies
2 Groot Uie gesny in blokkies
1 bossie seldery gekap
250 – 300 g gemengde groente (milies, ertjies en worteltjies)
1 blikkie klappermelk
2 Liter water
20 ml sout
2 eetlepels olyfolie

Roerbraai uie en seldery en kerrie in olyfolie.
Voeg lensies en water by en laat prut totdat die lensies ten volle sag en uitgedy is. Dit neem ongeveer 30- 45 minute Roer so nou en dan om te verhoed dat die pot aanbrand.
Voeg 1 blikkie klappermelk (lae vet) by en gebruik ‘n hand ‘blender’ om die sop te puree. Koop klappermelk sonder preserveermiddels.
Bring dit weer tot kookpunt, voeg sout en bevrore groente by. Kook tot groente net- net gaar.

Bedien met vars koljander en gekapte chillie en gerasperde suurlemoenskil indien verkies.
